Simple Vegetarian Recipes for Delicious Side Dishes

Another appetizer that is not an antipasto but goes very well with them is roasted garlic bruschetta. Bruschetta is easy to make and is always popular at a party. The first step to this vegetarian Italian recipe is to roast some garlic. If you have a clay garlic roaster, it’s a wonderful tool to use to roast a bulb of garlic, but if not, you can do without. Slice across the bottom of a bulb of garlic so that the cloves are exposed. Drizzle with oil and wrap in aluminum foil with a little bit of water. Roast in your oven until the garlic is soft, and when you remove it from the oven, the roasted cloves should slide out of the bulb easily.

If you want a little bit lighter flavor, you can also add some chopped cucumbers to the mixture, as well. One of the easiest gourmet vegetarian recipes out there has to be the cheese plate. If you’re having a sit-down dinner, make each guest his or her own small plate of cheese. Have a variety of three to five different kinds of cheese on each plate. Each piece of cheese should be big enough to allow two to three bites each. Keep baking until the dough just starts to turn brown. Remove if from the oven and set it aside. While the tart crust is baking, mix together some ricotta and Pecorino Romano cheeses with some fresh basil, garlic cloves, beaten eggs, salt, and pepper. Scrape this into the crust and smooth with a spatula. Return it to the oven, and bake until the filling has set and has started to puff. Once it’s started to cool, you can slice it in pieces and serve to your guests. You will find your guests extremely impressed that you made this tart all by yourself instead of buying it from the store. Also, you can add some diced vegetables to this dish, as well, although you might have to alter the cooking time a bit to account for the different ingredients.
